Margherita Pizza (Neopolitan Pizza) with a Twist

Fresh Ingredients

Fresh ingredients makes this pizza SO good and you can put it together in very little time!  It is my favorite pizza when done right.  Margherita pizza, or Neopolitan Pizza, although simple, has big flavor!  It doesn’t take long to put together (unless you are making the crust from scratch like I do!)

Pizza Crust

You may make your own pizza crust or you may buy it at the store.  If you want to be creative you can put it on already cooked pita bread or shortbread but you will need to shorten the cooking time!

I like my pizza crust super thin with a little fluff, in other words, not the crispy thin crust.  My favorite pizza crust recipe can be found here.  I do substitute all purpose or bread flower with ’00’ Pizza Flour in all of my pizza crust recipes.

It is VERY easy to make and you can make this same day, just hours before you knead (or need) it!  It makes enough for two crusts so since it is just the two of us, I make it, divide it, put one in the refrigerator to use the next day and keep the other to use immediately!  You may refrigerate it for a couple of days.

The Cheese is EVERYTHING

To me, the cheese is what makes or breaks this delightful pizza.  Our preference is Bocconcini which I call “mozzarella balls.”  You may substitute regular shredded mozzarella, which to me, is not the same.  Sometimes we have to do the substitute if we do not have access to bocconcini.

The Twist

The twist is I do not care for pizza sauce so the olive oil and the tomatoes are pretty much what constitutes the sauce for me!  The other twist is the addition of the drizzle of balsamic glaze.  It adds just the right amount of yum to this pizza!

Instructions

  1. Preheat pizza stone (preferable) or baking pan in a 450 degree oven. It is best to preheat the pan in the oven while the oven is preheating!
  2. Place crust on pizza stone and prepare according to recipe or package instructions.
  3. Brush olive oil on crust until it is covered lightly.
  4. cheese (yes, cheese on the bottom,) tomatoes, basil, salt .
  5. Bake for 15 minutes or until cheese has melted.
  6. Remove pizza from oven, drizzle optional balsamic glaze. Let it sit for 5 minutes before cutting and serving!
