Day 1: Infuse Butter with Lavender, Prep Lemon

  1. Make lavender butter. Mix lavender buds with softened butter. Leave in a covered container overnight. This allows the lavender taste to infuse in the butter.
  2. Using a potato peeler, remove the rind from lemon and juice. Set juice aside in covered container in refrigerator. Allow the lemon rind to dry on the countertop overnight. Do not cover rind.

Day 2: Make Cookie Dough and Freeze

  1. Grind dried lemon rind in a food processor or blender until it looks like "sprinkles."
  2. Mix butter, sugar, egg and extracts well using hand mixer or mixer stand on medium. Add salt.
  3. Add half of the flour, then your lemon juice and lemon rind. Mix well. Add the rest of the flour. Mix well until all of the flour is incorporated into the recipe.
  4. Separate the cookie dough into three balls. Using hands, roll each ball out into 1 inch diameter logs. Wrap the logs in wax paper and freeze overnight.

Day 3: Bake Cookies and Enjoy!

  1. Preheat oven to 350 degrees.
  2. Line baking sheets with parchment paper.
  3. Remove dough logs from freezer and unwrap wax paper.
  4. Slice the log into 1/4-1/2 inch round cookies and place on parchment paper.
  5. Bake at 350 degrees for 15 minutes. Do not let edges turn brown. Allow cookies to cool before removing from the baking sheet.

Notes

This is a multi-day process to make lavender shortbread cookies so plan accordingly!

Never mix lemon juice directly into an egg mixture, you will “fry” your eggs.  Lemon juice is mixed in after half of the flour is incorporated into the recipe.
